Barichara, one of the nicest colonial towns in Colombia and declared as a National monument, is a small, magical town, home to artists, craftsmen and painters. In contrast to the modern look of Bucaramanga, Barichara reflects old Spanish colonial times. The most traditional dishes here are: Pepitoria de chivo: goat meat accompanied with rice; Hormiga culona: roasted ants; Arepa Santandereana and Carne Oreada.
